Whilst searching for a vegan cookie recipe, I came across a site for The Vegan Cookie Connoisseur. She had a recipe for chocolate chip cookies, without too much sugar, so I decided to try them out. They were the best! I liked them even more than regular, buttery cookies. They have applesauce, raw sugar, and maple syrup in them. Yum!
I went ahead and used a large cookie scoop, so the batch made about 11 cookies. I slightly flattened the dough and they held their shape during cooking. They came out looking a bit like biscuits, because they were so thick.
I took some to work for a meeting and warmed them up for about 45 seconds. Delicious!
