Here is how I cooked Jamie Oliver’s Food Revolution Cookbook’s meatloaf and chickpea sauce. I made this before I went Vegan.
I made the meatloaf mixture and put it in the oven for 30 minutes. Meanwhile, I made the sauce.
I cooked the chickpeas and onions.
I added tomatoes.
This is the meatloaf out of the oven. I drained the juices into a bowl of rosemary from my garden.
I poured the sauce around the meatloaf and put the rosemary on top. The recipe called for covering this with bacon, but we didn’t have any. Then, you put it back into the oven (to cook the bacon).
Here it is complete.
Now that I’m eating Vegan meals, I will cook the sauce alone and serve it with rice.
