Last night, after beginning to read The Kind Diet, by Alicia Silverstone (which is a great read), I had a vegetarian dinner. Today, I ate vegetarian meals for breakfast, lunch, and dinner. I’m currently snacking on soy ice cream (non-dairy frozen dessert).
Here was my dinner tonight:
black beans cooked with garlic, onion, and paprika
brown rice with lemon
veggie quesadillas – onions and red bell peppers
